Ragout Rissoles Recipe (Yield 12-14 Pcs)

Skin Ingredients:

  • 125 Gr All-purpose Flour
  • 2 Tbsp Cornstarch
  • 350 Ml Water
  • 100 Ml Milk
  • 1 Tsp Salt
  • 1 Pcs Egg

Ragout Filling Ingredients:

  • 65 Gr All-purpose Flour
  • 50 Gr Unsalted Butter
  • ½ Tsp Nutmeg Powder
  • ½ Tbsp Mustard, Optional
  • 600 Ml Chicken Stock
  • 4 Tbsp Creamer
  • 2 Tsp Chicken Powder
  • 2 Tsp Sugar
  • ⅛ Tsp White Pepper
  • ½ Tsp Salt

Chicken Stock Ingredients:

  • 2 Pcs Chicken Thigh, Bone-in, Without Skin
  • 1 Liter Water
  • ½ Pcs Onion
  • 2 Clove Garlic
  • 1 Pcs Carrot
  • 3 Pcs Celery

Coating:

  • 1 Pcs Egg
  • 75 Gr All-purpose Flour
  • 120 Ml Water
  • Breadcrumbs

Others:

  • Green Thai Chili

Steps:
1. Cut the onions, garlic, and carrots into large pieces, then heat a non-stick pan and add the chicken. SautΓ© without oil until slightly browned.
2. Add water, onions, garlic, carrots, and celery. Cook for 15-20 minutes.
3. For the dough, in a bowl, mix flour, cornstarch, salt, eggs, water, and milk. Stir well and then strain.
4. Heat a 24 cm skillet, pour ¾ scoop or about 70 ml of the batter while spreading it evenly. Cook until the edges of the dough dry, then release. Repeat until the batter is finished.
5. Set aside the chicken and carrots, then strain the broth.
6. Shred the chicken and cut the carrots into cubes, set aside. Heat a pan, add butter and flour, cook until fragrant.
7. Add nutmeg powder and white pepper, cook until golden, then gradually add chicken broth while stirring.
8. Gradually add creamer while stirring, then add powdered chicken broth, salt, sugar, shredded chicken, carrots, and mustard. Cook for a few moments. Transfer to a bowl and let it cool.
9. Prepare the rissole skin, place the ragout filling, fold the right and left ends, then roll. Repeat until finished.
10. For the wet flour, in a bowl, mix flour, eggs, and water, stir well.
11. Coat the rissole in the wet flour and then in breadcrumbs.
12. Heat oil, fry the rissoles until golden brown, drain.
