Poached Ginger Chicken Recipe (Yield 5 Servings)

Marinated Chicken Ingredients:

  • 850 Gr Whole Chicken Thigh
  • 1.5 Tbsp Salt


  • 2 Liter Water
  • 20 Gr Ginger, Pound
  • 1 Pcs Green Onion, Sliced Into Large Pieces
  • 2 Tsp Salt
  • 2 Tsp Mushroom Stock Powder / Msg
  • 2 Tsp Sugar
  • ¼ Tsp Pepper

Garlic Ginger Oil Ingredients:

  • 70 Ml Oil
  • 30 Gr Ginger
  • 10 Clove Garlic
  • 1 Tbsp Sesame Oil
  • ½ Tsp Salt
  • ¼ Tsp Mushroom Stock Powder


  • Rice
  • Cilantro
  • Cucumber


1. Marinate the chicken with salt for 10 minutes, then rinse 3 times with water.

2. Heat the water in a pan until it’s simmering. Add the chicken, green onions, ginger, salt, mushroom powder, sugar, and pepper. Cook for 15-18 minutes on low heat without covering.

3. Slice the ginger. Add into the food processor and blend.

4. Add garlic and blend again. In a pan, heat oil. Then, add the chopped ginger and garlic, salt, and mushroom powder. SautΓ© until lightly browned.

5. Turn the heat off and add sesame oil. Stir and set aside.

6. Place the chicken into an ice bath for 3 minutes, then shred the meat.

7. Return the bones into the stock. Cook again on low heat.

8. Plate the chicken. Pour a bit of stock and add Garlic Ginger Oil on top.
