Chicken Sempol Recipe (Yield 20 Pcs)

Dough Ingredients:

  • 250 Gr Chicken Thigh Filet
  • 5 Pcs Shallot
  • 2 Clove Garlic
  • 1 Pcs Green Onion, Sliced
  • 4 Pcs Curly Red Chili, Sliced
  • 5 Pcs Kaffir Lime Leaf, Sliced
  • 2 Pcs Egg
  • 100 Gr Tapioca Flour
  • 40 Gr All-purpose Flour
  • 1 Tsp Salt
  • ¼ Tsp Pepper
  • 2 Tsp Sugar
  • 2 Tsp Chicken Powder

Thai Dipping Sauce Ingredients:

  • 3 Pcs Cilantro
  • 4 Clove Garlic
  • 20 Pcs Green Thai Chili
  • 3 Tbsp Bangkok Sambal
  • 1 Tbsp Fish Sauce
  • 2-3 Tbsp Lime Juice
  • 2 Tbsp Water

Steps:
1. Into a food processor, add chicken, salt, pepper, sugar, chicken powder, garlic, and shallots. Blend until sticky.
2. Add eggs, tapioca flour, all-purpose flour, green onions, curly red chili, and lime leaf. Blend again, then transfer the dough into a piping bag.
3. Prepare skewers. Insert half of the skewer through the plastic opening. Squeeze the bag while pulling the skewer out.
4. Boil in simmering water until cooked. Set aside.
5. For the dipping sauce, blend cilantro, green Thai chili, garlic, Bangkok Sambal, and fish sauce. Transfer to a bowl.
6. Add lime juice and water. Mix well.
7. Lightly beat an egg. Dip the Sempol into the egg, then fry until golden brown. Set aside.
8. Sempol is ready to serve.
