Ayam Penyet With Green Chili Recipe (Yield 6 Servings)

  • 850 Gr Whole Chicken
  • 5 Clove Garlic
  • 8 Pcs Shallot
  • 3 Pcs Candlenut
  • 1 Tbsp Coriander
  • 6 Cm Turmeric
  • 5 Cm Galangal
  • 2 Cm Ginger
  • 100 Ml Oil
  • 50 Ml Water
  • 3 Pcs Bay Leaf
  • 4 Pcs Lime Leaf
  • 2 Pcs Lemongrass, Pounded
  • 400 Ml Water
  • 2 Tsp Salt
  • 2 Tsp Mushroom Stock Powder / Msg
  • 2 Tsp Sugar
  • ¼ Tsp Pepper
Green Sambal(Sauce) Ingredients:
  • 3 Clove Garlic
  • 6 Pcs Shallot
  • 50 Gr Green Thai Chili
  • 12 Pcs Green Curly Chili
  • ¾ Tsp Salt
  • ¾ Tsp Sugar
  • ¾ Tsp Mushroom Stock Powder
  • 3 Tbsp Hot Oil
  • Kaffir Lime
Fried Tempeh Ingredients:
  • 8 Slice Tempeh
  • 2 Tbsp Cornstarch
  • ⅓ Tsp Salt
  • ½ Tsp Mushroom Stock Powder / Msg
  • Rice
  • Cabbage
  • Cucumber
  • Tomato
1. Slice the garlic, shallots, galangal, and ginger. Pound the candlenuts, then add all of them into the blender.
2. Add oil and water, then blend until smooth.
3. Heat the pan. SautΓ© the spices until fragrant.
4. Chop the chicken into 6 pieces.
5. Add lime leaf, lemongrass, and bay leaf into the spices. SautΓ© until fragrant and oily.
6. Add the chicken in along with water, salt, mushroom powder, sugar, and pepper. Stir, then braise until the liquid is reduced. Transfer to a bowl.
7. Heat some oil and stir-fry the green curly chili, green Thai chili, and shallots until they wilt. Transfer to the stone bowl.
8. Add garlic, salt, mushroom powder, and sugar. Mash roughly, then pour hot oil on it. Stir well.
9. Add kaffir lime juice. Stir well.
10. Let the chicken rest in the bowl for a moment before frying.
11. Slice the tempeh, then marinate with the leftover spices.
12. Add salt, mushroom powder, and cornstarch. Mix well.
13. Fry the chicken and tempeh until golden brown. Set aside.
14. Ayam Penyet is ready to serve.
