Padang Satay Recipe (Yield 10 Servings)

Ingredients:

  • 1 Kg Beef Tongue
  • 1 Tbsp Salt
  • 1 Tbsp Baking Soda, Optional
  • 5 Pcs Bay Leaf
  • Water
  • 350 Gr Beef Topside, Halved
  • Spices Ingredients:
  • 10 Clove Garlic
  • 12 Pcs Shallot
  • 1 Tbsp Whole White Pepper
  • 3 Pcs Large Red Chili
  • 2 Pcs Large Green Chili
  • 6 Cm Ginger
  • 2 Segment Galangal
  • 7 Cm Turmeric
  • 2 Tsp Coriander
  • 500 Gr Peanut
  • 100 Ml Oil
  • 50 Ml Coconut Oil, Optional
  • 60 Ml Water

Other Ingredients:

  • 2 Pcs Asam Kandis
  • 2 Pcs Lemongrass, Pounded
  • 2 Pcs Bay Leaf
  • 6 Pcs Kaffir Lime Leaf
  • 2 Tbsp Minang Curry Powder
  • 1 Pcs Turmeric Leaf, Small, Optional
  • 1.2 Liter Water
  • 2 Tsp Salt
  • 1 Tsp Mushroom Powder
  • ½ Tbsp Beef Powder
  • ½ Tbsp Sugar, Optional

Thickening Agent:

  • 600 Ml Water
  • 4 Tbsp Rice Flour
  • 3 Tbsp All-purpose Flour

Add-ons:

  • Ketupat
  • Fried Shallots

(Additional note: Substitution for Minang curry powder: 2-3 star anise, 5-6 cardamom, 2 tsp cumin, 1 tsp fennel, 1 tsp coriander, 4 cloves, 1/2 nutmeg, 4 cm cinnamon, 5-6 Java chili)

Steps:
1. Boil water, simmer the beef tongue with bay leaves, salt, and baking soda, simmer for 40-60 minutes on low heat.
2. Rinse the tongue with running water. Clean the tongue with a knife, peel the tough part, and cut it into large pieces.
3. Cut galangal, ginger, red chili, green chili, and turmeric.
4. In a blender, put garlic, shallots, ginger, galangal, turmeric, green chili, red chili, coriander, white peppercorns, peanuts, oil, coconut oil, and water, blend until smooth.
5. SautΓ© the spice until fragrant, then add lemongrass, turmeric leaves, bay leaves, kaffir lime leaves, Minang curry powder, and tamarind, cook until the spice releases oil and turns brown.
6. Add water, beef, tongue, salt, mushroom broth, powdered beef broth, and sugar, marinate for 30-40 minutes.
7. Set aside the meat, tongue, and spices. Cut the tongue and meat into small pieces, then skewer them.
8. Dip the skewers into the broth, set aside.
9. Mix water, rice flour, and wheat flour, stir well, then add it to the broth while straining, cook until thickened.
10. Preheat the grill, brush with oil, then grill the skewers until cooked on both sides.
11. Padang satay is ready to be served with ketupat and fried onions as a complement.
