Beef Rendang Recipe (For 40 Servings)


  • 4 Kg Beef Shank
  • 9 Bay Leaves
  • 6 Lemongrass, Bruised
  • 15 Kaffir Lime Leaves
  • 130 Gr Palm Sugar
  • 1.5 Liters Instant Coconut Milk
  • 1.5 Liters Water
  • 2 Tbsp Salt
  • 2 Tbsp Mushroom Broth/seasoning

Ground Spice Ingredients:

  • 36 Cloves Garlic
  • 30 Shallots
  • 350 Gr Red Chilies, Sliced
  • 30 Candlenuts, Bruised
  • 40 Gr Ginger
  • 60 Gr Galangal
  • 1 Tbsp White Peppercorns
  • 3 Tbsp Coriander
  • 300 Ml Oil
  • 125 Ml Water


  • Rice
  • Fried Shallots
  • Chicken Opor
  • Sambal Goreng Ati (Spicy Fried Liver)
  • Ketupat (Rice Cake)

1. Slice galangal and ginger, put them into a blender along with candlenuts, garlic, coriander, white peppercorns, and oil. Blend and add water until smooth.
2. Put the spice mixture into a pan. In the same blender, put red chilies, shallots, oil, and water. Blend until smooth, then pour into the pan.
3. Cook the spice mixture until fragrant over low heat, then cut the beef into pieces and set aside.
4. Add lemongrass, bay leaves, and kaffir lime leaves. Cook over medium heat until fragrant and cooked.
5. Add water, coconut milk, beef, palm sugar, salt, and mushroom broth. Cook over high heat until boiling, then reduce heat and continue cooking until tender for about 2-3 hours.
