Chicken & Shrimp Shumai Recipe (Yield 20 Pcs)

Marinade Ingredients:

  • 350 Gr Chicken Thigh Filet
  • 100 Gr Peeled Shrimp
  • 1 Tsp Salt
  • 2 Tsp Sugar
  • ½ Tsp Baking Powder


  • Grated Garlic + 1 Tbsp Water
  • Grated Ginger + 1 Tbsp Water
  • 1 Pcs Egg White
  • 50 Ml Cold Water
  • 2 Tsp Oyster Sauce
  • 2 Tsp Sesame Oil
  • ½ Tbsp Soy Sauce
  • 1-2 Tbsp Oil
  • ½ Tbsp Salt
  • 1 Tbsp Sugar
  • 1 Tsp Mushroom Stock Powder / Msg
  • ¼ Tsp Pepper
  • Shumai Skin, To Wrap
  • Carrot, Small-diced


1. Marinate the chicken and shrimp with baking powder, salt, and sugar. Mix well and marinate for 15-30 minutes.

2. Rinse the chicken and shrimp until the water is clear. Pat dry.

3. Add water into the grated ginger and garlic.

4. Add some of the chicken into the food processor along with salt, sugar, mushroom powder, and pepper. Blend until smooth.

5. Add the ginger and garlic liquid, egg white, oil, soy sauce, oyster sauce, sesame oil, and tapioca flour.

6. Slice the remaining chicken and shrimp, then add into the food processor. Chop roughly.

7. Transfer the dough into a bowl. Add cold water and mix well.

8. Shape the dough with shumai skin. Steam for 15 minutes.
