Capcay Recipe (For 7 Servings)

Broth Ingredients:

  • 500 Gr Beef Bones
  • 500 Gr Chicken Bones
  • 30 Gr Of Garlic
  • Enough Water

Filling Ingredients:

  • 75 Gr Shrimp
  • 75 Gr Gizzard
  • 75 Gr Chicken Breast Filet
  • 75 Gr Chicken Shrimp, Fried
  • 1 Tsp Baking Powder
  • 2 Tsp Cornstarch
  • 3 Tsp Egg White
  • 1 Tsp Salt

Other Ingredients:

  • 50 Gr Cauliflower
  • 50 Gr Of Putren Corn
  • 35 Gr Capri
  • 50 Gr / ½ Carrot
  • 120 Gr / 3 Cabbage Sheets
  • 50 Gr Of Mustard Greens
  • 1 Spring Onion
  • 1/3 Onion
  • 5 Cloves Of Garlic
  • 4-5 Tbsp Cornstarch + 2-3 Tbsp Water

Sauce Ingredients:

  • 1 Tbsp Soy Sauce
  • ½ Tsp Fish Sauce
  • 1 Tsp Sesame Oil
  • 1 Tsp Salt
  • ½ Tbsp Mushroom Stock
  • 1 Tbsp Granulated Sugar
  • 1 Tsp Cooking Wine, Optional
  • 750 Ml Broth
  • 1/4 Tsp Pepper


1. Boil water, add beef bones and chicken bones, boil for 5-10 minutes then rinse

2. Bring the water to a boil again, add the bones and garlic, boil for 2 hours

3. Cut the chicken breast fillets and gizzards. Transfer to a bowl

4. Marinate the shrimp, breast filet and gizzard with salt, baking powder, egg white and cornstarch, stir well. Leave it for a few minutes

5. Cut the cauliflower and soak it in salt water. Thinly slice carrots, cut mustard greens, putren corn and scallions

6. Crush the garlic, chop a little then chop the onion into large pieces

7. Heat a little oil, cook the chicken and gizzards, sautΓ© for a moment

8. Add the shrimp, stir-fry for a moment, set aside

9. Saute the garlic until it smells brown then add the cooking wine

10. Add the onions, cabbage and other vegetables except green mustard greens and spring onions, stir-fry for a moment until slightly browned

11. Add the stock, cook for a few moments then add the green mustard greens and spring onions. Cook for 3 minutes

12. Add the stir-fried meat and chopped kekian

13. Add salt, pepper, granulated sugar, mushroom stock, soy sauce, fish sauce and cornstarch solution, cook until slightly thickened

14. Add sesame oil, turn off the heat then stir well

15. Capcay is ready to be served
